Spicy barbecue chicken slow cooker burritos

No, I am not turning into a food blog but as a new mom, I am always trying to find recipes that my entire family can eat, even my little toddler. The goal is to cook nutritious, favorable food that fills you up that doesn’t require a lot of time preparing and cooking hands-on in the kitchen. I’ve been trying to use my crockpot more since I have a little one that loves to run around especially when I am in the kitchen preparing dinner. When I use my slow cooker, I can definitely taste the difference in the quality of meat, especially my beef.

Keto Primo was kind enough to send us a full-size sample of keto-approved, sugar-free bbq sauce. Now at first, I was thinking wow, sugar-free? Does that mean it will be nasty? Now in all fairness, I am not well-versed in the keto diet. But as a postpartum mom who is struggling with holding on to pregnancy weight, I am open to trying more healthy alternatives to my favorite foods.

Here is what makes this Keto BBQ sauce great—besides being sugar-free. The sweetness in the BBQ sauce is not from sugar or any sugar substitute like an artificial sweetener. Keto Primo uses monk fruit. Monk fruit is 200 times sweeter than regular table sugar and has zero calories. Can you believe that? The FDA has deemed it safe for pregnant women and children too so you know what that means? That means I was going to give some to my toddler. I decided to make her less spicy because she does enjoy a bit of kick to her food and I reserved the heat for her father and me.

Ok, enough talking here is how I cooked and prepared it.

1lb of boneless, skinless chicken
1 cup of brown rice
1.5 cups of dry red beans
1 tablespoon of black pepper
2 tablespoons of cayenne pepper
Olive Oil
Shredded cheddar cheese
2 tablespoons of crushed red pepper
Diced onion
Bag of spinach
Whole wheat tortillas

I soak my dry beans overnight and add a dash of msg seasoning. I also season my chicken overnight in the fridge because I want all the flavor on my chicken. I make my toddler’s chicken with less spicy seasonings. The following day I put my slow cooker on high for the chicken. I throw the seasoned chicken in with a cap full of oil and let it cook. Around the 4 hour mark, I start making the beans. The beans need about 2 hours to cook and at the 1-hour mark on the beans, I add the brown rice. As the beans and rice are cooking, the chicken is roasting nicely in the crockpot. I forgot to mention, I usually take out a portion of beans and rice for my daughter so she doesn’t get all the full-seasoned food and I add her less seasoned food in Tupperware so she can eat it over the next few days.

Around the 7 hour mark, the beans and rice are done. I add the beans and rice to the slow cooker with the chopped onions and fresh spinach. I let it simmer all together for about an hour and I added the shredded cheese first. Then I added the Keto Primo as the final touch and it smelled so good. I let it all simmer and turn the cooker to warm and wait about 30 minutes before serving. I wrap them all in soft, wheat tortilla wraps and it was so delicious. I loved the BBQ sauce and it didn’t have any weird aftertaste to it. The texture and the flavor is everything you expect from a BBQ sauce. The kid loved it, too! Now off to find a low-sugar dessert.
